Meatloaf

Such a pedestrian dish and not one I often crave. However, I recently had a large package of ground beef that I needed to use and decided to see if I could come up with a decent recipe from what I had in the pantry. I didn't even think to take a photo of it. After all, meatloaf just looks like meatloaf. It was delicious, though, so I figured I'd better write down how I made it in case I ever want to have it again!

1 large package ground beef (2.25 to 2.5 pounds)
3 eggs
2 small (5.5 oz.) cans V-8 vegetable juice
1 small onion, diced
1-1/2 cup old fashioned oats
seasoned salt
pepper

Mix together all the ingredients and pat into a 7 x 11" glass baking dish. Bake uncovered in a 350F oven for approximately an hour to an hour and fifteen minutes.

Trish and I love meatloaf....my meatloaf! I make a fantastic one.

Ground beef, Italian bread crumbs, onion, minced garlic, egg, 1 can of Hunts Meatloaf fixin's tom. sauce and a touch of Pic a Petter sauce. Just before I pup it in the oven I put one or two strips of turkey bacon across the top.

Yum!

I was always told- "Don't let your Meat Loaf". I never got it until now!

I LOVE THAT BASIC DISH. I swear it's all in my head, but it even tastes better since my wife got the Pampered Chef one FREE- many years ago!

I love meatloaf! However, it's better on day 2, cold, in a sandwich, with ketchup!

My recipe is similar to Pam's... hamburg, italian bread crumbs, egg, onion, garlic, some ketchup and milk in the mix. Spoon mixed tomato sauce/ketchup over the top for the last 20 minutes.

I'm sounding like a ketchup freak!

Yours sounds interesting. Will try it.

I've used breadcrumbs in lots of dishes and both of your recipes sound good, Pam & Quid.

John... I went to a Pampered Chef party once. They had lots of great stuff!!

Vegetable juice in a can? Really?

Tracy - You don't have V-8 or the equivalent over there?? It's been around here all my life!! It looks pretty much like tomato juice, but the 8 stands for the number of vegetables included in the juice. It comes in regular, spicy and low-sodium and is quite good.

Sometimes we just want some beef and this sounds good. Usually I try to avoid it for health reasons.
