Cheese-topped Lemon Chicken Breasts

I got inspired this week and decided to try another new recipe. Once again from Simple & Delicious, this one was submitted by Renee Mitchell of McChord AFB, WA. My husband seemed to like it well enough and I loved it! I will definitely make it again. I used chicken tenders rather than breast halves, “lite” butter & soy sauce and substituted 2% “Fiesta Blend” cheese (from WalMart).

Cheese-topped Lemon Chicken Breasts

4 boneless skinless chicken breast halves (4 oz. each)
¼ tsp. salt
¼ tsp. pepper
3 Tbsp. butter
¼ cup lemon juice
2 Tbsp. soy sauce
¾ cup shredded Colby cheese

Sprinkle chicken with salt and pepper. In a large skillet, brown chicken in butter on both sides over medium heat. Sitr in lemon juice and soy sauce. Bring to a boil. Reduce heat; cover and cook for 4-5 minutes or until meat juices run clear.

Remove from the heat. Sprinkle each chicken breast with cheese. Cover and let stand for 2-3 minutes or until cheese is melted. Yield: 4 servings.

This has got to stop Kelly or Hubby will be leaving home in order to find someone who, like yourself, can cook. I really should taks some basic cookery classes but, truth be told, I have no interest whatsoever. Still I suppose we have rubbed along nicely for 23 years with him cooking and me washing up.

I'd love this, but Ray wouldn't like it. He only likes chicken fried.

Did you know Laura Childs has a new scrapbooking mystery out? I can't recall if you read those along with her teashop mysteries. It's set in New Orleans. I'm reading that now and it's pretty good.

Sounds to me like you and your husband have a pretty good system worked out, Tracy!

Marion, I just read the teashop mysteries. I gave the first one in the other series to a friend of mine who loves to scrapbook as a retirement present. Don't know if she liked it or not. I thought about starting them, but decided I have enough other stuff to read!
